TOKYO - Demonstrating its long-held commitment to help preserve and protect the planet's natural resources, Conrad Tokyo has announced its participation in Sustainable Seafood Week (http://s-seafood.jp) - an innovative new campaign to help raise awareness of sustainable seafood consumption. Led by a collaboration between *WWF Japan and **Marine Stewardship Council (MSC) Japan Office, the inaugural programme takes place from June 5th to 15th, 2014, disseminating the idea of the MSC ecolabel for wild-caught seafood and ***Acquaculture Stewardship Council (ASC)'s mark for the farmed.
"Our participation marks a modest but meaningful step in helping to raise awareness and help promote the initiative," says Conrad Tokyo general manager Heinrich Grafe. "The campaign presents a wonderful opportunity for our guests to learn about making a sustainable seafood choice while enjoying the culinary creativity of our restaurants. This meaningful participation is one of the ways the hotel supports the Living Sustainably pillar of Hilton Worldwide's corporate responsibility strategy, Travel with Purpose TM."
Two of the luxury hotel's restaurants, China Blue and Cerise, will feature special menus commemorate the environmental venture.
China Blue chef Albert Tse's special menu features a creative medley of seafood presented with a seasonal touch.
"Sustainability is a way of life. Knowing exactly where our fish comes from through researching the supply chain from top to bottom is the key to understanding sustainability," says Tse.

At Cerise, Conrad Tokyo Executive Chef Jose Sanchez says integrating sustainability and gourmet cuisine is critical to raising environmental awareness. "Sustainable seafood dishes are delicious and have the additional benefit of helping to promote responsible sourcing of seafood."
